Shake all ingredients less the Prosecco and soda water. Pout into a cocktail glass and top with Prosecco and soda water. Garnish: Basil, raspberries and watermelon.
Basil Syrup:
Take three stalks os basil (1bunch) and add to 300 ml of water. Bring to a boil and reduce heat to low. Steep for 8 mins and remove from burner. Allow basil tea to continue to reduce for another 10 min. Measure out 200 ml of the basil tea and add it to 200 ml of white sugar. Wish until all sugar has dissolved. Put in a bottle and place in the fridge to chill.
