1 tablespoon olive oil
1 white, red or yellow onion, diced
1/4 teaspoon salt
1 lb | 450 g lean beef mince
1/4 cup |60 ml beef stock
2 tablespoons |30 ml gluten free Worcestershire sauce or Henderson’s (UK)
1 tablespoon dijon mustard
1 tablespoon |15 ml gluten free tamari/soy sauce or Coconut Aminos for paleo/soy free option
1 teaspoon sugar
1/2 teaspoon garlic powder
1 teaspoon ground black pepper
more salt to taste
1/4 cup mayonnaise
1 tablespoon tomato paste
2 teaspoon mustard
2 teaspoons 10 ml pickle juice
2 tablespoons pickles, finely diced
1/4 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon sea salt
1 tablespoon | 15 ml water
2 small/medium head romaine lettuce, chopped
2 cups cherry tomatoes, sliced
2 ripe avocados, pitted and sliced
1 medium red onion, thinly sliced
1 cup pickles, sliced
Heat oil in a large skillet or pan over a medium heat. Add the diced onions and 1/4 teaspoon salt and sauté for 7-10 minutes until soft and translucent.
Add the ground beef and cook until almost completely browned, about 5 minutes. If the pan is looking dry feel free to add more oil as needed. Use a wooden spoon to break up the meat.
Turn the heat up high and add the beef stock, Worcester (or Henderson’s) and mustard, soy sauce (or coconut aminos), sugar, garlic powder and black pepper. Cook until the liquids have evaporated and the beef looks like it’s starting to caramelise and look slightly crispy around the edges. Turn off the heat and remove the pan from the burner. Set aside until you’re ready to construct your burger bowls.
Add all of the special sauce ingredients to a small bowl and mix everything together until combined. Taste and season with more salt as needed.
Divide the chopped lettuce between four bowls. Add sliced onions, avocado, cherry tomatoes and pickles (or just add your preferred burger toppings). Top with beef mince and drizzle special sauce over the bowls and enjoy.
How to Make this Paleo?
Worcestershire Sauce isn’t necessarily strictly paleo as it often contains a bit of molasses so keep that in mind if you need to follow the Paleo diet to a T. That being said there are plenty of DIY paleo Worcestershire sauce recipes that you can make if you’re up for it.
Instead of sugar, you can skip it, or add 1 teaspoon honey or maple syrup instead.
