Lightly crush 4 lbs fresh blueberries and place in large pot with 2 lbs white sugar and 1 gallon of water. Let simmering (NOT boil) for 1/2 an hour. Remove from heat and stir in 1/2 tsp pectin, 1/2 tsp acid blend, and 1/4 tsp wine tannin. Let cool in fermenting bucket until room temperature. Add 2 1/2 tsp yeast and seal in fermenter. After 10 days, strain and siphon into a sanitized carboy. Set aside for 2 months. Rack a final time and set aside for 3 months. The final product should be a dark, rich color and show no signs of fermentation activity.
