Sweet Potato Vodka

Before you run screaming in the other direction, know that pairing sweet, earthy flavors (like sweet potato) with umami ingredients (like mushrooms) is a very common gastronomic practice. If that doesn't help, then just remember all of the delicious recipes we've given you in the past. The pairing works surprisingly well together given the right base (we tried gin as well and found that the juniper interfered with this combination, though a neutral moonshine might work as an alternative to vodka). Start by washing and thoroughly drying 2 large sweet potatoes and a cup of shitake mushrooms. Slice both and layer in glass jar(s), then fill with vodka. Store in a cool, dry place for 4-5 weeks, shaking occasionally. Serve straight with a garnish of pickled onion.
