The Mint Syrup:
1. Make 12 oz 1:1 simple syrup
2. Bring a large pot of water to a boil. Meanwhile, put some ice cubes in a medium bowl & fill with water for an ice bath.

3. Grasping the stem ends of 7 fresh mint sprigs, immerse the leafy ends in the boiling water for 15 seconds. Remove & immediately submerge in the ice bath for 1 minute.
4. Remove from bath, dry using paper towel, & pick the leaves from the stems.
5. Blend the blanched mint leaves & simple syrup on high speed. Strain through a fine-mesh strainer or cheesecloth. Refrigerate.

- 0.75 oz Mint Syrup
