If you want to do it at home, do you know how to smoke brisket on a pellet grill? This entire process may seem a little overwhelming, but allow me to share with you a tried-and-tested recipe that will offer you a wonderful flavor of the original smoked brisket on a pellet barbeque.

Why Pellet Grills?

If you love beef brisket, then you can say that pellet grills are the reason that will make you fall in love with this amazing dish all over again. The consistent taste combined with a steady temperature gives this dish an amazing twist and makes the process simpler and easier. 

 

Importance of resting the beef

Never underestimate the value of resting the beef after smoking; don’t cut corners here! The brisket can be rested to allow the moisture to be redistributed and reabsorbed into the meat. A piece of beef that has been cut too quickly will have lost its fluids and become dry and rough.

 

Ingredients required

I have to warn you first because this recipe is quite simple, and all the ingredients are easily available at your nearest grocery store, so you might see yourself doing this more often. You will need:

  • Beef brisket: Get a whole packet that will have two parts, i.e., flat and the point, that are separated by a layer of deckle (also known as fat)
  • Seasoning rub: These ingredients help to add flavor. You will need coarse kosher salt, onion powder, garlic powder, paprika, and coarse black pepper.
  • Binder: To stick the meat and make your brisket tastier.
  • Mustard: For a balanced taste

 

Equipment needed

  • Pellet grill
  • Wood pellets
  • Probe meat thermometer
  • Knives (sharp ones)
  • Pink butcher paper

 

Cooking Method

I will try to make things very easy in a step-by-step way that will help you make a perfect smoke brisket on a pellet grill.

  • Trim away the silver skin, fat, and gray edges from the lean side
  • Trim the fat on the other side just by a quarter of an inch
  • Keep the fat trimming in an aluminum pan
  • Stir paprika, salt, garlic powder, onion powder, and black pepper in a bowl.
  • Apply seasoning on every corner of the brisket and make sure to press it after applying
  • Refrigerate the brisket for 8 to 24 hours after tightly wrapping it in plastic wrap.

(This time will give seasoning to spread through the meat and give it a great taste.)

  • Now place the brisket (fat side down) on the grill.
  • Smoke at 225 F with the lid closed.
  • Give it 4 hours to smoke
  • Render the fat through a metal strainer.
  • At room temperature, allow the liquid tallow to cool and solidify.
  • When the internal temperature reaches 165 F to 175 F, remove the brisket from the smoker
  • Check for a dark base

(This procedure will take almost 6 hours.)

  • Put it lean-side down on a piece of pink butcher paper that has been covered in 1 cup of solidified tallow.
  • Roll it
  • Now put it back in the smoker at 250 F

(Try to put fat side up as it will continue to smoke.)

  • Start checking once the temperature reaches 190 F

(You have to check for its softness as it will give a feel of soft butter.)

  • Before cutting the brisket, let it rest for about two hours. (for flavor juices to reach every corner)
  • Cut the brisket into a very thin slice
  • Now enjoy the delicious smoked beef brisket
