- Fennel and Juniper pair surprising well together, so it's no surprise that we decided to try our hand at fennel infused gin. The results are earthy and delicious. Wash and chop a fresh bulb of fennel into several large pieces. It's important that the chunks remain large enough to hold up against the longer than usual soaking period. Place the chopped fennel in a jar and let sit for 6 weeks (yep, you read that right). Strain and rebottle. Allow to sit for another 2-3 weeks. It's really important to give the flavors of this mix time to mellow and sweeten, and a rushed jar is going to be overly bitter. After the full 8-9 weeks the mix should be perfect for serving straight or for use as a base for more complex cocktails.
